Clean eating inspiration: Delicious low carb collard green and turkey wrap.
What you’ll need:
- 2 raw collard green leaves
- 2 or 3 red pepper slices
- 2 slices of low fat/low sodium turkey
- 1/2 tbsp of mustard
- Small amount of your favorite cheese (This is optional. I used brie. Shhh, don’t tell anyone. Hey, it’s low carb, let’s treat ourselves! However, those who can’t eat dairy can substitute with avocado. I just didn’t have that on hand.)
How to recreate:
This is super simple to put together! All you need to do is gently heat the washed raw collards (one at a time) on a hot pan till the leaves are pliable. Then, assemble your sandwich just as you would with a traditional wrap.
